Apple Sultana Muffins

School has been back for the past few weeks. How are all you other Mum’s been feeling? I am sad & happy all at the same time. We had a beautiful last week of the holidays over on the East Coast of Tasmania with our kids. Sun, surf, beach, food - such a dream. Anyways, got home the arvo before school started and got stuck into the kitchen with my 9yo to make some school lunch treats. We whipped up these muffins in 10 minutes - and they went down a treat 🙂

 

If you want a gluten-free option, you could switch the spelt flour out with buckwheat flour. 

 

Ingredients

  • 250g spelt flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 100g coconut sugar
  • 2 eggs
  • 125ml coconut milk
  • 4 tbsp olive oil
  • 2 apples, peeled & cut into small pieces
  • 100g sultana
  • 2 tbsp sesame seeds

 

Method

  • Step 1
    Heat oven to 180c. In a large bowl mix the spelt flour, baking powder, cinnamon and coconut sugar.
  • Step 2
    In another bowl, mix the eggs, coconut milk and olive oil. Pour the wet ingredients into the dry and mix well, then stir in the apples, sultanas and sesame seeds.
  • Step 3
    Divide the mix between 24 mini muffin tray and bake for 15 mins. Cool on a wire rack, then pack in a container for lunch.
