Zucchini Slice (DF & GF)

Yum, yum, yummo - who doesn’t love a good old Zucchini Slice?! My mum used to make it all the time when we were little. I gave her recipe a bit of a “glow up” to make it gluten-free and dairy-free friendly. It’s packed with nutritional yeast, to give the slice a cheesy flavour.
Ingredients
- 3 cups (380g) grated zucchini
- ½ red onion, diced
- 6 medium sized eggs
- 1/2 teaspoon salt
- 1/2 teaspoon cracked pepper
- ¼ cup extra virgin olive oil
- 2 tbsp chopped rosemary
- 1 cup buckwheat flour
- 2 teaspoons baking powder
- ½ cup nutritional yeast
- 200g nitrate-free bacon, diced
METHOD
- Preheat the oven to 180c. Line a baking dish with baking paper and set aside.
- In a food processor, chop the zucchini and onion until it resembles a “grated” texture.
- Add to the food processor eggs, salt, pepper, olive oil, rosemary, buckwheat flour and baking powder. Beat well, until the batter comes nicely together.
- Stir in nutritional yeast and bacon.
- Pour the zucchini slice batter into your pre prepared baking dish and even out the top.
- Place the zucchini slice in the oven and bake for 45min or until cooked through and golden on top. The slice is ready when you gently push in the middle and there is no ‘give’.
- Ideally allow to cool in the baking tin for at least 10 minutes before cutting up to serve.
